Missippi Mud Pie
I made another Missippi Mud Pie at the weekend, for a birthday where we had to bake something from a country and then dress as that country. This time I only left the dough for half an hour rather than a full hour. I think this made the dough easier to work with, as this time I was able to not get any holes in it! This recipe from Hummingbird is large enough to make a mini-pie as well (great for my mum and brother). It is also possible to make the pie with a biscuit base, using bourbon biscuits. This base is good for an extra chocolate hit, but I personally prefer the pastry base as it provides a nice contrast.
