Spinach, Butter Bean and Pesto Risotto

This was a recipe that was first made for me by a friend on holiday - we had a big group of us staying in an apartment in Lisbon, and she recommended this as a good big batch cook!

So when I got home, I asked her for the recipe - she sent a photo of a recipe that her mum had taken out of Good Housekeeping, and I'm pretty sure that it is the same recipe as this link http://www.goodhousekeeping.co.uk/food/recipes/italian-bean-risotto 

This is a nice simple, but tasty, risotto recipe, and also is a good dish for vegetarians or just simply as cost saver, since the beans are the main source of protein! Hope you enjoy making this!
