During the week I made Black Bottom Cupcakes from the Hummingbird Bakery's cookbook. They consist of a dense chocolate sponge, a cheesecake filling which includes chocolate chips, and then cheese cream frosting. I absolutely love these, they are my favourite of the Hummingbird's classics (aka the ones they sell in their stores).
