Food Medic's Pho
Just a quick one from me, in the middle of a very cold and wintery week here in London!
I shared this photo on my Instagram (@theellabakery) a while ago, and I've made it a couple of times again since then, and then made it last night. It totally hits the spot on a cold evening, and is pretty quick to pull together.
This recipe is from the Food Medic for Life cookbook, and it is a recipe I have been making again and again! I've found the best way to do it is to use chicken which is left over from a Sunday roast - this gives the chicken a great flavour and makes it a lot quicker as well. I would recommend both the recipe and the cookbook, it's a great one to have in the rotation as inspiration.
