Roast Salmon and Vegetables



Let me tell you about a fairly simple but tasty meal that I cooked the other night!

This was baked salmon fillet with some Italian herbs and a few chilli flakes on top, with some roasted new potatoes and carrots, and boiled broccoli and peas. I then added some lime juice on the salmon, as well as a soy-sauce based jus. The jus had toasted sesame oil, soy sauce, sesame seeds and a few extra spices in there!

This was an easy, and fairly hands off but tasty dish, and feels very light and healthy!
