Piccante Chicken Pasta
Thought I'd share some pasta that I made a while ago, but that I recently made again! It's a slightly spicy chicken, chorizo, tomato and broccoli pasta, with one of my favourite shapes of pasta, strozzapreti.
I cooked the cubes of chicken (two breasts worth) until browned with some thinly diced onions and garlic, then added 8 thin slices of chorizo, a can of chopped tomatoes, tomato paste and some mixed herbs.
I cooked the pasta and broccoli in a separate pan of water. When they were cooked, I drained that pan and stirred it into the pan of chicken and chorizo.
Easy but satisfying pasta dinner!
