Red Velvet Cupcakes




I've posted about these before, but thought I'd share these red velvet cupcakes that I made for my end of year English party last week. As I still cannot find liquid red food colouring, I used a gel colouring instead, which I found worked just as well. In the Hummingbird Bakery's recipe, the cocoa powder is supposed to be added to the liquid food colouring to form a paste, however did does not form properly when using a gel colouring. Instead, add the cocao powder to the mixture with the flour, and then add the food colouring at the end. Put in more then you think; it should produce a really vibrant batter as some of the colour will be lost when it bakes.
