Rocky Road

This is a slight variation on Nigella's rocky road recipe. First melt 230g of milk chocolate (I like Dairy Milk best), 125g of unsalted butter and three tablespoons of golden syrup.
While this is melting, crush 200g of digestive biscuits using a rolling pin.
Once the chocolate mixture has fully melted, mix it into the biscuit mixture, keeping about a quarter back. Then add 50g of mini marshmallows and mix until the marshmallows just start to melt.
Pour into a baking tray and press down firmly with the back of a spoon.

Cover with the remaining quarter of chocolate and then put in the fridge to harden.


Once set, cut into small squares, as it is very rich, and enjoy!
