As December was getting a bit cooler, I decided that these would be a great pre-Christmas bake! They are gingerbread cupcakes from the Hummingbird Bakery's Cake Days book. The subtle hints of spice (ginger and cinnamon) are great and not too overpowering. It is then topped off with cream cheese frosting, which, as I think I have before, instantly lifts any cake! I decided not to put anything else on top as I felt that the simple look was quite nice, and as the cream cheese is so rich I didn't want to make it any more sugary!
