Salmon and Mango Curry
I wanted to share this photo and great recipe that I made recently. It is the green mango and fish curry from Nadiya Hussain's cookbook Nadiya's Kitchen.
I really like this cookbook, and this is one of several great dishes we've made from this book. To recreate this recipe, I used fresh salmon, one fillet per person. I also added a portion of broccoli and peas, to include more vegetables in the dish.
For me, this was a great different to usual way to use mango, and it went well with the salmon and the light curry sauce.
