Gluten Free "Oreo" Birthday Cake


I'd like to share this gluten free "Oreo" birthday cake that I made recently for a friend who has gone gluten free for health reasons. This was a recipe from Lily Vanilli's Sweet Tooth cookbook. While this didn't rise as much as I would have liked (although I will blame my oven not the recipe as this seems to be a recurring problem!), it tasted good and had a good reaction from my group of friends! The recipe used ground almonds and poppy seeds instead of flour, and this gave it a nice texture - the poppy seeds in particular definitely contributed to making it feel like an "Oreo" cake!
