Carrot Cake for Mother's Day



Just wanted to share a couple of photos of a cake that I made for Mother's Day at the end of March - a a carrot cake, but without walnuts as my Nan, who was also there for Mother's Day, doesn't like them. 

I used the Hummingbird Bakery's recipe from their first cookbook, and topped with cream cheese icing and a sprinkle of cinnamon! I've tried a couple of other carrot cake recipes before, and the Hummingbird Bakery recipe is my favourite by far - it holds together without being too dense, and the spices in it give it a great flavour! 

Top tip: always get more carrots weight-wise than the recipe calls for, as during the peeling and grating you will definitely lose a bit of carrot!
