Lemon Victoria Sponge
This is a lemon Victoria sandwich that I recently made with a friend for another friend's birthday - we followed a recipe from the National Trusts' book Simply Baking. We then decorated with lemon and orange jelly sweets - a 21st birthday cake has to say 21!
It was made a similar way to a regular Victoria sponge, with lemon juice and zest in the sponge, and the same in the classic buttercream.
A good take on a classic cake!
