Chocolate and Carrot Brownies


Last weekend I made my first recipe from the fourth Hummingbird Bakery cookbook, Life is Sweet. I've been meaning to do some baking from here for a while so was happy to finally bust the book out! 

These brownies were a fairly normal mixture, but with 400g of dark chocolate and 230g of carrots! The carrots didn't make much difference to the taste, but gave them a nice moist texture and feel! 

I would definitely make these again, partly for the reaction of people when I tell them that there are carrots in what look like normal brownies!
