Cream cheese brownies
These are a Nigella recipe that I made over my Easter holidays. Two favourite things about this recipe: it is so quick to make, and it is just different enough to be interesting.
This would work with an basic brownie recipe. Make up your brownie recipe, then pour half into a baking tray.
Next, place thing slivers of cream cheese of top of this half of the mixture. Try to get an even spread, but it doesn't matter if there are a couple of thicker patches as it will melt when cooked.
Then pour the remaining half of the brownie mixture over the top. Cook for however long the recipe recommends. These are definitely best eaten warm, so don't be afraid to dive in as soon as they come out of the oven (and are cool enough to pick up)!
