Carrot Cupcakes

I just can't get enough of carrot cake - it's alway my go to, and it so easy to make really! This time I went for carrot cake cupcakes, as they are easier to make and easier to share as well. I ended up taking about half of this batch into work to share with my colleagues, as I used my usual Hummingbird Bakery recipe which makes about 24 cupcakes. I then added half a walnut to the top of each cupcake for decoration (they also have walnuts in!).
