Great Green Pasta
This is a pasta dish that is good served either hot or cold. It is good to make three - four portions, as it works well for lunch the next day as well.
This is really simple - cook the pasta of your choice (short pasta works best, around 60g per portion), and three minutes before it is done, add 60g of edamame per portion. Drain the pasta, let it cool slightly, then mix in green pesto. Then chop a handful of spinach per portion, mix this in, then add half an avocado per portion. Dish up, then sprinkle pumpkin seeds over the top to add a nice crunch.
