Light Pork Loin Dinner


Happy New Year! Similar to a lot of people at the start of the year, I am getting back into my routine and trying to recapture the healthy eating and home cooking that was slightly lost in December! 

This is one of my favourite lighter dinners, as it still feels filling without ending up over-full.

It's very simple to put together and consists of:
  • Cooked pork loin (one per person) - cook in the oven for 15-20 minutes
  • Tomatoes, chopped in small pieces
  • Haricot beans (or similar, quarter of a can per person)
  • Avocado (half of one per person)
  • Lettuce or other salad leaf
  • Soy-based sauce: this consists of 5 tsp soy sauce (can also use tamari), 1 tsp sesame oil, half of a fresh (or dried can work) chili, 1 tsp white wine vinegar, 1 tsp coriander, 1tsp parsley, 1 tsp honey, and a dash of water. Mix it all together in a mug and then pour over the assembled salad.
  • Fried egg on top! Cook for 3-4 minutes depending on how you like the yolk
While the pork loin is cooking, assemble the rest of the salad and the sauce. When the pork loin is almost ready to come out, get the fried egg going. Take the pork loin out, add the to salad, then top with the fried egg and sauce. The sauce can either be warm or cold - if you want it warm heat for 30-45 seconds in the microwave. This all comes together very quickly and has become a weekend favourite in my house, I hope you enjoy it!
