Lemon Drizzle Cake
My first attempt at a Lemon Drizzle Cake! After consulting a few different recipes, all with different ingredients/quantities, I went for trying a middle road and adapting a recipe!
155g each of plain flour, caster sugar, and unsalted butter (make sure this is at room temperature)
2 tsp baking powder
3 medium eggs
Grated zest and juice of 1 lemon
Mix the flour, baking powder and sugar together in a mixing bowl. Then add the butter, eggs, and lemon to the mixture and mix well until the whole mixture is combined.
Bake in a loaf tin for about 35 minutes, or until the skewer (or chopstick that I usually use) comes out clean. Let the loaf cool in the tin.
While its cooling, mix 160g of granulated sugar and the juice of 2 lemons, then pour this over the top of the loaf, after pricking the surface of the loaf with a fork.
Then turn out the of tin and enjoy!
