18th Birthday Cake

Continuing today's theme of simple birthday cakes, here's the birthday cake I made for my brother's 18th birthday. We had big meal out at lunchtime, so a light cake was all he wanted for the family to enjoy. I made him, on his request, a Victoria sponge cake with jam and buttercream in the middle. Simple, light and very tasty indeed. Sometimes simple is just as effective!
