Carrot cake remains one of my favourite types of cake since first baking it a couple of years ago (in fact it was my first proper post on this blog!) and this was a different way as I have already made a carrot cake and carrot cake cupcakes. I left the icing off this to make it a big lighter. The tray bake was also a good way to get more portions out of the same recipe, as anything I bake seems to go very quickly with so many people in my flat!
