Salad Bowl


Even though summer is starting to feel like it's turning to autumn, it's still been warm here and there is always a call for a tasty salad bowl I think!

The above bowl has spinach, roasted sweet potatoes, butter beans and chickpeas fried with some paprika, roasted aubergine, cherry tomatoes, and some very finely chopped (in the food processor) cabbage and carrot. I then eat most of my salad bowls with a big dollop of hummus!

While this might sound like a lot of ingredients to put together, here is the kind of 'formula' that I find works well:
  • Two - three raw vegetables (e.g. chopped cucumber, tomatoes, finely chopped cabbage 
  • Two - three roasted vegetables (e.g. sweet potato, aubergine, carrot, butternut squash, potatoes)
  • A leafy green (spinach, kale, etc)
  • A bean or pulse, lightly cooked in a frying pan with a bit of spice (e.g. butter beans, chickpeas, borlotti beans or similar)
  • A big dollop of hummus, or another dressing, like a sweet chili or honey mustard
  • Optional topping of a sprinkle of seeds, like pumpkin seeds 

Hope this helps gives some suggestions of ways to build up a tasty and healthy salad bowl, that could work for either lunch or dinner!
