Parsnip, Pear and Ginger Cake
This weekend I made a parsnip, pear and ginger cake, a recipe from Lily Vanilli's Sweet Tooth.
This was a great recipe, and feels very warm and perfect for a wintery cake. The pear and parsnip give it a nice texture (similar to carrot cake) and it also had raisins, and cream cheese icing, so very much the same feel!

My other favourite recipe from this book is the Chocolate and Avocado cake that I made for my birthday last year - I recently made this into cupcakes which also worked well!
