Ultimate Beans on Toast
Everyone knows beans on toast is a classic, and a great easy lunch. It's certainly an old favourite that I turn to, especially when running low on supplies! This is the next step up, a twist on the classic.
I substituted regular baked beans for Heinz' Five Bean mix, which adds more variety and a good variety of textures. On top this I then added a handful of cheese (in this picture a mixture of cheddar and Monterey Jack, but mature cheddar also works well by itself). On top of this then went 4 thin slices of chorizo and a fried egg. The addition of the chorizo and fried egg takes it up a notch and adds completely different flavours. I used two slices of toast and a whole can of beans, which resulted in a very large portion that could certainly be eaten for dinner! Equally, taking this recipe down to one slice of toast and half a can would still make a good lighter lunch.
