Gingerbread Cupcakes

This is one from a while back - December to be precise! I realised that I'd never published this post before, so I thought I'd share. These are gingerbread cupcakes - a great cake version of gingerbread cookies, and an easier version of gingerbread cake. These are topped with lemon cream cheese frosting, and the hint of citrus provides a nice balance to the strong cinnamon and ginger. Although I made these in December, and I think they would work all year round, especially as the frosting raises it past that purely wintery taste!
