Quesdillas

These fall into the category of not actually baked, but instead a new dinner I made that I want to share.
Apologies for the less than great photos!



These were made using turkey mince, which I made up as usual using a tomato sauce, and other ingredients as if you were cooking a fajita filling. I then put the mince (thin layer, about a cm thick) and an even layer of cheese between two fajitas. I then fried these in a very thing layer of olive oil, flipping once. Be careful with the flipping, it takes some practice not to lose some of the filling! I then ate them with some natural yoghurt and avocado.
