Millionaire Shortbread



This millionaire shortbread consists of three layers: shortbread, caramel and chocolate, is one of my favourites because it is pretty simple to make but so tasty!

Recipe
Shortbread: Preheat the oven to 170 celsius. Mix together 225g of flour and 100g of caster sugar in a bowl. Once mixed together, rub in 225g of unsalted butter (it is easiest to do this by hand). Once you have combined it all, you should have a large ball of dough. If it is a bit dry, add water by teaspoons until it comes together. Spread the dough evenly over a rectangular baking tray. I find that the back of a spoon is the best way to get a flat, even surface. Bake this for 20 minutes or until golden brown. Once it comes out of the oven, start to make the caramel.
Caramel: Combine 120g/4oz of butter, 120g/4oz of soft brown sugar, 2 tablespoons of golden syrup and 200ml of condensed milk in a saucepan over a medium heat. Once the mixture has melted, bring it to a medium boil and bring it to the the boil for 3-5 minutes. The longer it boils for the thicker it will be, so it depends on the consistency you want. I went for a fairly solid consistency so that it wouldn't be too messy when eaten. When it has boiled for the amount of time you want pour it over the top of the cooled shortbread. Place in the fridge to set.
Chocolate: the easiest layer. Once the caramel is nearly solid, melt 200g of milk chocolate (or dark if you prefer) in the microwave. Once melt, spread over the top of the caramel. This should give a thin chocolate layer. I then added white chocolate stars for decoration.
